Easy Slow Cooker French Onion Pot Roast

This dish takes everything you love about classic French onion soup, the deeply caramelized onions, the savoury broth, the richness, and pairs it with a tender, slow-cooked beef roast.

Equipment

  • 6-7 quart slow cooker same size if using dutch oven method

Ingredients

  • 4 lb beef roast
  • 3 Tbsp butter
  • 1 Tbsp olive oil
  • 6 cloves garlic
  • 5 med-lg yellow onions
  • 4 cups beef stock
  • 2 Tbsp Worcestershire sauce say that 5 times fast :)
  • 2 Tbsp apple cider vinegar
  • 1 tsp dried thyme
  • 1 tsp onion powder
  • 1 Tbsp sugar or sweetener of choice
  • 2 bay leaves
  • 6 Tbsp flour of choice
  • salt
  • pepper
  • 1.5 cups gruyere cheese shredded, swiss can work too

Instructions

  • Pat down your beef roast and sprinkle a generous amount of salt and pepper on all sides
  • Heat a large skillet over medium-high heat. If you're making the pot roast in the oven, you can do this directly in the dutch oven
  • Add the butter and oil. When the butter melts and starts to crackle, add the beef roast to the skillet and sear on all sides for about 2-3 minutes per side until browned.
  • Remove roast and place on plate
  • Add more oil to pan and sauté onions until they start to break down

  • Add half the onions to the slow cooker, then add the garlic, beef broth, Worcestershire sauce, apple cider vinegar, onion powder, dried thyme, bay leaves, sugar, and the beef roast. Top with the other half of the onions.

  • Allow the roast to cook on the low setting for 6-8 hours.
  • After the 6-8 hours, Turn oven on broil
  • Remove the broth from the crockpot and place in pot on stove to make a gravy
  • Add the flour to broth and whisk to bring to low boil until broth thickens
  • Remove the roast from the crockpot and place in dutch oven or roast pan
  • Add gravy to roast pan with roast, top with gruyere cheese and broil for 5 mins until cheese starts to brown and bubble.

  • Remove from oven, carve and serve
