Sunday has quietly become our “roast day” of the week. It’s something we all look forward to. My husband, the kids, and sometimes a few friends gathered around the table for a meal that feels just a little more special than the rest. There’s something about a slow-cooked roast that invites you to linger. We eat, we talk, and we settle into the rhythm of what’s coming in the week ahead.
It might seem a little unexpected to share a slow cooker pot roast recipe this time of year, but honestly, this dish has its place even in the warmer months. On those rainy, grey, or cooler days, it absolutely hits the spot. While we don’t rely on the slow cooker as much in spring and summer, when we do pull it out, it feels like a treat: comforting, nostalgic, and deeply satisfying.
When I first heard about French onion pot roast, I immediately knew I wanted to try it, and, of course, make it my own. After experimenting with a few different versions, tweaking ingredients and methods, I finally landed on one that feels just right. It’s rich, flavourful, and incredibly simple to pull together.

What makes French onion pot roast unique?
This dish takes everything you love about classic French onion soup, the deeply caramelized onions, the savoury broth, the richness, and pairs it with a tender, slow-cooked beef roast. As the roast cooks low and slow, it soaks up all those incredible flavours, becoming melt-in-your-mouth tender. It’s truly a match made in heaven.
And let’s not forget the finishing touch: that golden, bubbly layer of Gruyère cheese on top. It brings the whole dish together in the most indulgent way.
Can you make this in the oven instead of a slow cooker?
Yes, absolutely. If you prefer using your oven, you can cook this as a braised roast in a covered Dutch oven at a low temperature (around 300°F / 150°C) for several hours until tender. That said, the slow cooker makes this recipe especially easy and hands-off, perfect for busy days or when you want dinner ready without much fuss. I prep the crockpot Sunday mornings when I get up, and we go about our day. Come late afternoon, we have a beautiful main ready for supper.
If you don’t have a slow cooker, I highly recommend getting one. I lean on my slow cooker so much for time savings and flexibility. Click here to shop.
How do you add the Gruyère cheese when using a slow cooker?
You don’t add the cheese directly into the slow cooker, and that’s actually part of what makes this recipe so practical.
Once your roast is fully cooked and tender, transfer it to an oven-safe dish, top it generously with shredded or sliced Gruyère cheese, and place it under the broiler for a few minutes. In less than 10 minutes, you’ll have that beautifully melted, lightly browned, bubbly cheese layer that gives this dish its French onion flair. It’s a small extra step that makes a big difference.
What type of beef roast works best?
The beauty of this recipe is its flexibility. I typically use whatever I have on hand, but tougher cuts that benefit from slow cooking are ideal. Some great options include:
- Chuck roast
- Blade roast
- Brisket
- Round roast
These cuts become incredibly tender over several hours and absorb all the rich onion flavour beautifully.
What should you serve on the side?
We love serving this pot roast over a bed of creamy mashed potatoes. It’s the perfect way to soak up all that delicious broth and onion gravy. A simple fresh salad on the side adds a nice contrast and keeps the meal balanced.
If you want to switch things up, you could also serve it with roasted vegetables or a crusty baguette to lean into those French onion soup vibes.
This dish has quickly become a favourite in our home. One of those meals that feels both comforting and a little bit special. Whether you’re gathering around the table with family or sharing it with friends, it’s the kind of recipe that brings people together. And really, that’s what good food is all about.
